Every leaf has a temperature it prefers

These are the settings we use in our own kitchen. Treat them as a starting point and lean the cup toward how you like it.

Measure by weight

Two to three grams of leaf for every 8 oz of water. Larger, fluffier leaves take up more room than they weigh.

Mind the water

Filtered water, brought fresh to temperature. Water reboiled several times steeps flat.

Steep, then taste

Start at the time on the tin, taste, and adjust. Most loose leaf will give you two or three good infusions.
